Today’s video is more of my day to day on the homestead. Though, a little different for me was instead of the regular wheat sourdough bread I tried out gluten free sourdough. To my surprise, my first try was AMAZING! I have been in a sense studying gluten free sourdough and ended up just making my own recipe. Most recipes I found included bakers personal made flour blends which cost more than I am willing to pay for. I developed a recipe using the cheapest ingredients that can all be found at Walmart. After I have mastered the recipe I will share it with everyone 🙂
Why gluten free? Our daughter, Neala, has Celiac Disease and Type 1 Diabetes. Gluten is off limits and we try to reduce the amount of sugar we intake because it does spike blood sugars. You’ll notice I used two strange ingredients in my sourdough. The first was xanthan gum which helps the bread keep its texture and holds things in place. The second was sugar free maple syrup. Many GF recipes used honey and maple syrup to sweeten the bread but both of those would add unnecessary carbs for a diabetic. The sugar free option adds some sweetness without the carbs.
The garden is coming to a close. Last week we harvested all the tomatoes, red or not. We are ripening the green ones inside with apples. They release the ethylene gas which works perfect to ripen fruit and vegetables. We will frequently check the box for new red tomatoes.
